Vietnamese Rice Noodle Soup with Beef

May 12, 2014 by A Savory Feast 23 Comments

Vietnamese Rice Noodle Soup with Beef

One of my favorite hole-in-the-wall places in my hometown is a little Vietnamese restaurant where they serve rice noodle soups. I love how they bring you a plate of garnishes along with your steaming hot bowl of broth, noodles and meat. Andrew and I have been talking about making it at home forever, so when I was trying to decide what to make the other night I thought it was time to give it a try.

Even though the list of ingredients looks pretty long, this dish is so easy and fast to put together! Andrew and I made it together and were impressed at how quickly we were done and sitting down to eat.

Vietnamese Rice Noodle Soup Garnish Plate

The best part of this meal is adding your own garnishes to create a unique flavor. It turned out a little bit different for each person depending on the amount of each garnish we added.

Here’s the recipe:

For the broth:

1 tablespoon oil
2 medium onions, diced
1 tablespoon minced garlic
1 tablespoon ground ginger
zest of 1 lime
1/3 cup fish sauce
4 cups chicken broth
4 cups beef broth
2 cups water
2 tablespoons soy sauce
2 tablespoons sugar

Noodles, meat and garnish:

1 pound flank steak, sliced thin
1 tablespoon oil
1 package rice noodles
1 cup loosely packed Thai basil
1 cup loosely packed cilantro leaves
2 green onions, sliced thin
1 lime, sliced

1. Heat 1 tablespoon of oil in a skillet and cook the steak for 5-7 minutes or until done. Set aside.
2. In a large pot, heat the other 1 tablespoon of oil at medium high. Saute the onions and garlic for 2 minutes.
3. Add the ground ginger, lime and fish sauce. Stir for 1 minute.
4. Add chicken broth, beef broth and water. Stir and bring to a boil.
5. Add soy sauce and sugar. Let simmer 15 minutes or until ready to serve.
6. Prepare the rice noodles according to the directions on the package.
7. Divide the rice noodles among the bowls. Add beef. Ladle the broth on top.
8. The basil, cilantro, green onions and lime are for a garnish and to add flavor. I like to arrange them on a plate and bring to the table so that everyone can add what they like to their bowl.

I love food like this! When Jared and I visited Florida, I was very pleasantly surprised in how many delicious looking Thai and sushi restaurants there were around town! Those are some of my favorite foods. And, since we’ll be in Florida, I bet the seafood is ten times better than where I am in Texas! : )

Totally drooling over your recipe. All I have to do is sub the soy sauce for tamari and it is gluten free. Thanks for sharing!

This sounds delicious! I was already trying to convert the recipe in my head to make for my vegetarian kids–I would do vegetable broth and leave out the steak.

I grew up in NYC and that means, you never have to learn how to cook anything exotic because chances are, you can head over to a hole-in-the-wall shop and get it. Now that we’re in PA, it’s not easy to get delicious stuffs like this. I don’t know why I’ve never tried to make this kind of food. I love Udon soup, Lamb Saag, Spanakopita … basically all kinds of delicious exotic foods. With your recipe, it’s doable!!! PINNED!

I really need to make this again soon, it was so good! I love exotic foods too and for the most part, they are easy to come by in Sarasota/Tampa Florida. Udon is one of my favorites too!

My daughter is home in Montana for the summer, after attending college in Seattle. While I think she is happy to be having my home cooking, she says she misses Pho! I can’t wait to make this recipe for her (or, better yet, make it with her!) Found your blog on SITS… Happy SITS DAY!
