Ultimate Chicken and Avocado Sandwich

Remember the other day when I shared my Avocado Vegenaise Sauce recipe? Today I want to share a delicious way to use it! Andrew and I are actually having a lot more fun coming up with ideas for dinner now that we are eating healthier. This Ultimate Chicken & Avocado Sandwich is so flavorful and good for you, too.

In order to make this sandwich healthier, we made a couple of healthier substitutions instead of some of our normal ingredients. We used turkey bacon rather than regular bacon and a whole wheat bun. The chicken is “grilled” using a Cast Iron Grill Skillet (more about this amazing tool in a future post!).

Avocado Vegenaise Sauce

By the way, if you don’t have vegenaise (or if you aren’t a fan of the stuff) you can use mayo instead! We actually made the sauce with mayo the first time but decided to start using vegenaise instead to make it a little better for us.

I’m excited to come up with more ways to use this sauce! If you have any ideas, be sure to leave a comment! The other day, Andrew suggested we stuff burgers with it, so we may need to give that a try!

Here’s the Recipe:

4 Whole Wheat Buns
Avocado Vegenaise Sauce (get the recipe here)
4 boneless chicken breasts, grilled
8 slices of bacon
4 eggs, fried

1. Spread the Avocado Vegenaise Sauce on the buns.
2. Layer the grilled chicken, bacon and eggs on the bun.
3. Serve immediately.

    This goes directly into the COOK! folder on my browser. If I could have one tree in the yard for fruit, it would be avocado. I could find a way to get it into all three meals a day – and a couple of snacks, too.

      The nice thing about this meal is that you could just replace the avocado with regular mayo or vegenaise for your sandwich and still make the avocado sauce for your husband!
