Tuscan Paleo Pasta – Guest Post from the Suzie Lou Blog

I am Laura, creator of the Suzie Lou Blog which is dedicated to the many creations and quarks in my journey in life, love, food, friends, family, and most importantly God!  When I am not working on my blog I can be found living my dream as an actress on the stage of my local community theatre or in a local coffee hangout planning my next greatest adventure.  Grab a cup of joe and come along for the ride!

Ingredients

Rinse artichokes and roughly chop them. Rinse asparagus as well.

Chop all of your remaining ingredients

To make the zoodles, chop off both ends of zucchini and then use veggie peeler to make fettuccine strips.

To begin the sauce, saute garlic in olive oil. Then add the remaining ingredients as you see below.

Place the lid on your pan and turn the heat to medium-low and let simmer. Meanwhile sprinkle zoodles with salt and let them sit in a colander to remove any excess moisture.

Then add your zoodles and allow them to warm up in the sauce.

Serve them up and ENJOY!
