Healthy Italian Chicken & Quinoa

August 12, 2014 by A Savory Feast 7 Comments

Healthy Italian Chicken and Quinoa
Remember a few weeks ago when I talked about the healthy changes I’m making? One of those changes involves cooking healthier dinners. One of the ways I do this is by creating healthier versions of my favorite meals.

For this Healthy Italian Chicken & Quinoa recipe, I was wanting something “italian” but didn’t want a sauce and pasta dish. This recipe uses quinoa instead of pasta and has lots of fresh ingredients!…

March 21, 2014 by A Savory Feast 7 Comments

5 Friday Favorites quinoa5 Friday Favorites is a weekly post here at A Savory Feast. Each week I pick a new category and list my top 5 favorites. Got an idea for a category? Contact me! Want to let me know your favorites? I love getting comments!

Happy Friday! I hope your week has been great so far. It’s no secret that I love quinoa! If you have ever stopped by my blog before, I’m sure you’ve seen a recipe or two using quinoa. For my 5 Friday Favorites this week, I’m sharing with you my 5 favorite quinoa recipes on my blog.

What is quinoa? It’s a whole grain that is really good for you! It’s high in protein and contains all 9 amino acids. It’s easy to add to a meal in place of rice or pasta, as I have done in all of these recipes below. Quinoa is much faster to cook than rice and is much healthier than pasta. I also like the texture it adds to the dish.

#1 Healthy Chicken Quinoa Curry: I love making this recipe with my favorite red curry sauce from Trader Joe’s. This dish is one I make regularly because it’s so easy to throw together and is really filling. I also have a seafood version of this, Scallop and Quinoa Curry.

#2 Chicken Quinoa Soup: If you are under the weather, this is the perfect thing! I actually liked it a lot better than the traditional chicken noodle soup.

#3 Tilapia with Quinoa and Feta: I came up with this dish by walking through the grocery store and picking different things to add to quinoa! It turned out great and has resulted in a lot of other versions.

#4 Chicken Quinoa Stir-fry: I love making stir-fry! This recipe also includes a homemade stir-fry sauce that is so good.

#5 Italian Tilapia and Quinoa: If you love italian food, this is a great way to get the flavor without all the carbs. It’s also a really quick meal to put together, so it’s perfect for a busy weeknight.

Italian Tilapia and Quinoa

March 6, 2014 by A Savory Feast 9 Comments

italian tilapia and quinoaThis recipe for Italian Tilapia and Quinoa is a super easy one to put together for a weeknight dinner. I love how fast tilapia cooks so it is often a go-to for dinner. Cook some veggies and you have a quick healthy meal!

I am a big fan of italian food but because I try to stay away from breads and pasta, I don’t eat it very often. By making this meal with quinoa, I can still have an “italian meal” without as many carbs.

Here’s the recipe:

2 cups quinoa
4 cups chicken broth
1 (14.5 oz) can diced tomatoes (drained)
1 (3.5 oz) container feta cheese
6 tilapia filets
Salt
Pepper
Onion powder
2 tbsp olive oil

1. Combine the quinoa and chicken broth in a pot. Bring to a boil.
2. Add the tomatoes to the quinoa and stir.
3. Cover and simmer for 15 minutes.
4. In the meanwhile, season the tilapia and heat the oil in a skillet on medium high.
5. Place the tilapia in the skillet and brown for 2 minutes on each side.
6. Lower the heat for the skillet to medium and cook for 5 minutes or until done.
7. Remove the quinoa from the heat. Add the feta cheese and stir.
