Have you ever tried making dessert in a slow cooker? I have always wanted to, so when My Cooking Pots sent me a Crock-Pot Slow Cooker to review, I knew I had to try it!

This time of year I love spending time with friends around a bonfire. It’s even more fun when we make s’mores! This cake takes the concept of a s’more and turns it into a moist and delicious cake.

Crock Pot

I’m starting to realize how amazing slow cookers are! I must admit, I’m getting a little obsessed. I love being able to just throw a bunch of stuff in and have a delicious meal ready a few hours later. I can’t wait to try making more recipes with it.

One of the best things about this slow cooker is that the stoneware insert is removable, which makes cleaning a breeze! It’s even dishwasher safe.

Another great feature is the cooking time presets. Once it has cooked for the set time, it automatically shifts to the warm setting. This is great for when you are going to be gone all day! You don’t have to worry about your food overcooking if you run a little late.

It’s finally Fall! I’m so excited to break out the scarves and boots, bake some Fall treats and spend time outside enjoying the cooler weather. To celebrate the beginning of this wonderful season, I’ve teamed up with 18 other bloggers to bring you a fun week of posts featuring the best of Fall.

Let’s get things started with my first Fall recipe of the week!

Baked Apples Stuffed with Cinnamon Walnut Oatmeal

Apple is probably the scent I most strongly associate with Fall. Nothing says “Fall” like the smell of these baked apples in the oven! Trust me, your house will smell heavenly.

I don’t know about you, but something about the cooler weather just makes me want to bake! These baked apples are great, though, because they are a lot healthier than most Fall treats.

Coring an Apple

After trying various knives and tools to core the apples, I decided I need an Apple Corer! If you have one, I’m sure it will make the process much quicker! I added an apple corer to my wish list!
Baked Apples

Just look at how wonderful they look! These Baked Apples tasted like an apple pie without the crust. Serve them with vanilla ice cream and sprinkle extra oatmeal over the top. Wonderful! If you have extra oatmeal leftover, you can save it for breakfast in the morning!

Ingredients

  • 4 large Granny Smith apples
  • 3 cups rolled oats
  • 1 tbsp cinnamon, plus more to taste
  • 1/2 tbsp nutmeg, plus more to taste
  • 1/2 cup chopped walnuts
  • 2 cups unsweetened original almond milk
  • 1 tsp vanilla
  • 2 tbsp maple syrup
  • Vanilla ice cream to serve with it

Instructions

  1. Preheat oven to 350. Lightly grease a pan. You will want one that has sides that are two inches deep and will fit your apples with plenty of room for extra oatmeal. For 4 apples you can probably use a 8x8 pan.
  2. Core the apples. I made a hole that was almost 1 inch in diameter and went almost to the bottom of the apple. If you like, you can cut a hole all the way through.
  3. In a small bowl, combine the oats, cinnamon, nutmeg, walnuts, almond milk, vanilla and maple syrup. It should be fairly liquid-y still.
  4. Use a fork or other small utensil to stuff the oatmeal into the apples. Push down to get as much as you can in.
  5. Place the apples in the pan and spread the remaining oatmeal around them.
  6. Bake for 35 to 50 minutes. Apples should be slightly browned and soft to the touch, and the oatmeal will have absorbed most of the almond milk.
