Remember the other day when I shared my Avocado Vegenaise Sauce recipe? Today I want to share a delicious way to use it! Andrew and I are actually having a lot more fun coming up with ideas for dinner now that we are eating healthier. This Ultimate Chicken & Avocado Sandwich is so flavorful and good for you, too….
4 ingredients. 20 minutes. This chicken recipe just can’t get any easier! You probably have everything in the kitchen, so you can cook up this recipe any time you are in a pinch.
Heat up some frozen veggies and make a boxed pasta or rice to go with it. I like to keep a few packages of frozen broccoli or spinach in the freezer and some quinoa or rice in the pantry so that I can serve it with any meal I make….
I’ve seen a lot of healthy Greek yogurt recipes lately, so I decided to try one for myself. I couldn’t get enough of this creamy sauce! I marinated the chicken in some of it, reserving extra sauce to serve on top of the chicken and some couscous. You could also try serving this dish with rice or quinoa.
This meal is perfect for a busy weeknight. Cook some frozen vegetables to serve with it and you have an easy meal that is good for you too! This Creamy Greek Yogurt & Chicken recipe is one I will definitely be making again soon.
Here’s the Recipe:
2 large bone-in chicken breasts (I removed the skin, but you don’t have to)
1 1/2 cups greek yogurt
1/2 cup milk
1 lemon
1 1/2 tablespoons olive oil
1 tsp garlic, minced
1 tsp dried oregano
1 tsp dried parsley
1 tsp pepper
1. Combine the greek yogurt and milk in a bowl.
2. Zest the lemon into the yogurt mixture. Cut the lemon in half and squeeze one half into the mixture.
3. Mix in olive oil, garlic and spices.
4. Put chicken and about 3/4 of sauce in a ziploc bag. Make sure the chicken is coated in sauce and marinate in the fridge for 30-45 minutes.
5. Preheat oven to 375.
6. Bake chicken for 35-45 minutes or until done.
7. Serve with couscous or rice and top with remaining sauce.
I’m always looking for ways to use Quinoa in some of my favorite dishes. This time, I used it to replace rice in stir-fry. Don’t let the long list of ingredients scare you, this dish really is easy and tastes like something you would get in a restaurant!
I almost picked up a bottle of stir-fry sauce at the store but check what the ingredients were first. They were all things I had in the house so I decided to google a recipe for stir-fry sauce and give it a try. It tasted great!
Here’s the recipe:
2 large boneless skinless chicken breast halves, cubed
1/4 cup canola oil
1 cup quinoa
2 cups chicken broth
1 (15 oz) can Stir-fry vegetables (the can I got had sprouts, bamboo shoots, water chestnuts and baby corn)
1 cup snow peas
1 egg, scrambled
Stir-fry sauce (see below)
Stir-fry Sauce:
1 tbsp corn starch
1/8 cup brown sugar
1/8 tsp ground ginger
1/4 tsp garlic
1/2 cup soy sauce
1/8 cup apple cider vinegar
1/4 cup water
1 cup chicken broth
1. Mix the ingredients for the sauce in a bowl. Set aside.
2. Combine the quinoa and chicken broth in a pot and bring to a boil. Cover and simmer for 15 minutes.
3. In a skillet heat the oil on medium high. Brown the chicken for 1 minute on each side.
4. Add the snow peas and lower the heat to medium. Cook for 5 minutes.
5. Add quinoa, stir-fry vegetables, sauce and egg. Bring to a boil.
6. Lower the heat to a simmer and cook 5 minutes or until the chicken is done and snow peas are tender.
I love anything Buffalo Chicken, so when I found this recipe on Pinterest, I just had to try it. In fact, this was the first meal I ever cooked for my boyfriend when we first started dating (yes, he was impressed).
This dish is loaded with so much good stuff, starting with crispy texas toast and layering on buffalo chicken, lots of cheese, green onions and ranch dressing. I’ve tried several kinds of buffalo sauce and found that Texas Pete Extra Mild Buffalo Wing Sauce (pictured above) has the best flavor. You can’t go wrong with the texas toast, the garlic one works well or if you love cheese get any of their cheese topped varieties.
