Breakfast is definitely my favorite meal of the day. Pancakes, omelets, muffins, you name it, I love it. The only problem is there aren’t enough Saturday mornings to make breakfast! This morning I wanted some fruit muffins but the only thing I had in the house was canned peaches. It turns out, they work great!
I couldn’t find a recipe using canned peaches so I found a few that used fresh peaches and modified them a bit. Most of them called for oil but I decided to use the syrup from the canned peaches instead. I added cinnamon, nutmeg and all spice to give the muffins more flavor. The best part is how great the house smells while they are cooking!
Here’s the recipe:
2 1/4 cups flour
3 tsp cinnamon
1/4 tsp all spice
1/4 tsp nutmeg
3/4 tsp baking soda
3/4 tsp salt
2 eggs
1/2 cup sugar
1 (15.25 oz) canned peaches in syrup
1. Preheat the oven to 400.
2. Mix together the flour, cinnamon, all spice, nutmeg, baking soda and salt.
3. Stir in the eggs and sugar.
4. Add the peaches with syrup and sliced them as you stir.
5. Divide into 12 muffins. Bake for 25 minutes.
