Awhile back I asked my readers what their biggest challenge was when it came to cooking dinner. One of the most common responses was a lack of time, especially when you get home after a long day of work.
So I’ve been hard at work creating some easy dinners that involve few ingredients and less than 30 minutes to make, including prep time. This Sausage and Potato Skillet is my latest creation!
This recipe starts with 3 ingredients that are really inexpensive. Can you believe this meal serves 4 and costs around $10? It’s easy and doesn’t cost much more to up the amounts of ingredients to serve more people or to provide bigger portion sizes.
If you really want to get dinner ready in a flash, you could cut up the sausage, asparagus and potatoes the night before and keep them in the fridge until you are ready to cook. You’ll have dinner ready in a matter of minutes!
It may be easy and cheap, but this dinner is sure to be a hit with your family! It’s definitely going on the regular rotation for us.

Sausage and Potato Skillet

Ingredients
- 2 tablespoons olive oil
- 6-8 small red potatoes
- 1 small bunch of asparagus, about 10 stalks
- Salt, pepper, onion powder and garlic powder to season
- 1 pound turkey sausage
Instructions
- Heat the oil in the skillet on medium high while you prep the ingredients. Cut the red potatoes into small chunks, cut the asparagus into 1-inch pieces and cut the sausage into 1/2-inch pieces.
- Put the potatoes and asparagus in the skillet and cook for 5 minutes. Season the veggies with salt, pepper, onion powder and garlic powder. Add in the sausage and cook for 10-12 minutes or until everything is cooked thoroughly.
