I am loving pudding parfaits lately! I like to keep some pudding in the house and then try different toppings each time I am craving a sweet treat. Chocolate chips, sprinkles, fresh fruit and cookie crumbles are all great for topping the pudding. Check your pantry and see what you can come up with!
Parfaits are lots of fun for entertaining. You can make them ahead of time or set up a make-your-own parfait station. These tapioca parfaits are super simple, but are great for a fancy date night dinner or a girl’s night.
For this parfait, I wanted to create a fresh and beautiful dessert for summer. Raspberries go great with tapioca pudding, and a drizzle of honey adds a little bit of sweetness. This is just the thing for a hot summer day!

My husband LOVES tapioca! I think it’s weird, but I think all pudding is weird (it’s a “mystery substance” like Jello!) I bet he would be beside himself if I made something like this for him!! I’d just change mine out to yogurt. Love honey and raspberries! Best combo ever.
