While I have no problem eating pumpkin all year, I decided to come up with a new one bowl bread idea for this year.
I like to bake muffins or breakfast breads often so that I can have them on hand for an easy breakfast or snack for my toddler. I try not to give him much refined sugar, so I use natural sweeteners such as maple syrup, honey or applesauce in our baked goods.
This bread was quick and easy to mix up, even with my toddler hanging on my legs and getting up on the counter to try to “help.”
Since I made it in one bowl I didn’t have much to clean up after, either!
When you think of peanut butter, the next thing to come to mind is often jelly! It’s a winning combo and of course this bread goes great with some fruit jelly or jam.

Ingredients
- 2 cups flour
- 1 tbsp baking powder
- 1 1/2 tsp salt
- 1 1/4 cup peanut butter, I used creamy but crunchy is fine, too.
- 1 egg
- 1/2 cup maple syrup
- 1/2 cup milk
- 1 tsp vanilla
Instructions
- Preheat oven to 375 F. Grease a loaf pan.
- In the bowl of your stand mixer, mix together the flour, baking powder and salt. Add in the peanut butter, egg, maple syrup, milk and vanilla. Mix until combined. The mixture will be thick.
- Transfer the batter into the loaf pan. Bake for 35-40 minutes or until a toothpick inserted into the center of the bread comes out clean.
