Monster Cookies are one of my all-time favorite types of cookies. I mean, M&M’s AND chocolate chips? Yes please! This recipe takes them to the next level by turning Monster Cookies into a delicious sandwich.
Between two Monster Cookies is a simple, 3-ingredient frosting filling. It only takes a couple extra minutes to whip up the filling and spread it in between the cookies.
From now on, all cookies should be sandwich cookies. Agree? You’ve got to try these and you will be convinced, too.

Monster Sandwich Cookies
These HUGE Monster Sandwich Cookies are over-the-top good! Monster Cookies are a favorite because of how they are packed with all sorts of yummy ingredients: chocolate chips, M&M's, oats and more. This sandwich takes them to the next level by adding a sweet icing in between two cookies.
Ingredients
For the cookies
- 1/2 cup butter, softened
- 1 cup light brown sugar
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla
- 1 egg
- 3/4 cup flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups oats, dry, uncooked
- 1 cup M&M's
- 1/2 cup semi-sweet chocolate chips
For the filling
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1-2 tablespoons milk
Instructions
- Preheat oven to 350 F.
- In a stand mixer, cream the butter and brown sugar. Add in the peanut butter and mix until combined.
- Add in vanilla and egg, mix until combined.
- In a small bowl, combine the flour, salt and baking soda. Add the dry ingredients into the wet a little at a time. Mix until combined.
- Fold in the oats, M&M's and chocolate chips.
- Place by spoonfuls onto a ungreased cookie sheets. Try to make the spoonfuls as close to the same size as you can. Bake for 10-12 minutes or until golden brown. Let cool for a couple minutes on the pan until transferring to a wire rack to cool completely.
Make the frosting
- In a stand mixer, cream the butter. Add in the powdered sugar and mix. Add in one tablespoon of milk and mix, add in the other tablespoon if needed.
- Spread frosting on the bottom of a cookie and press the other cookie bottom into the frosted cookie to create a sandwich.
