We eat a lot of chicken at our house, so I try to mix things up a couple times a week with another protein. Cod has been one of our favorites lately! It’s inexpensive to buy fresh, doesn’t have a strong fishy taste and is easy to prepare.
If you are new to cooking fish or you are picky about what types of fish you like, this is a great place to start. The cod is topped with melted butter or ghee and seasoned with salt, pepper and dried basil. It’s topped with slices of fresh lemon to give it extra flavor.

How to Make Lemon Herb Baked Cod
I like to use fresh cod from the fish counter at my local grocery store, but this recipe will work with frozen cod as well (just thaw according to the directions on the package before cooking).
First, line a baking sheet with parchment paper for easy clean up. Place the cod on the paper with the side where the skin was down.
Sometimes I like to use ghee instead of butter when I am cooking, but if you don’t have it in the house butter will work fine. Melt the ghee or butter in the microwave and pour it over the fish.
Season with salt, pepper and dried basil and top with slices of fresh lemon. Bake for 12-15 minutes or until the fish is white and flakey and cooked through.

I like to serve this Lemon Herb Baked Cod with a side of vegetables such as steamed broccoli or green beans. It also goes great with rice, such as a risotto or a rice pilaf. I also love to serve this with spaghetti squash for a lower carb meal.

Here's how to make a simple, light dinner using cod. Lemon Herb Baked Cod is ready to go in the oven in under 10 minutes and baked in 15. Perfect for busy weeknights!
Ingredients
- 1.5 pound filet Cod
- 2 tablespoons ghee (or butter), melted
- Salt and pepper
- 1 teaspoon dried basil
- 1 lemon, cut into slices
Instructions
- Preheat oven to 375 F. Line a baking sheet that is large enough for your filet of cod with parchment paper.
- Place the cod on the parchment paper with the side where the skin was down.
- Pour the melted ghee (or butter) over the cod. Season with salt, pepper and dried basil. Place the lemon slices on top.
- Bake for 13-15 minutes or until the fish is white and cooked through. Serve immediately. I removed the lemons before serving.
Notes
This recipe is delicious with other types of white fish as well, such as tilapia or swai.
