Need a quick and healthy packed lunch idea? These Cucumber “Sandwiches” are a breeze to make and are a great addition to your lunch box.
Do you pack your lunch each day for work or school? It can be hard to come up with healthy lunches to pack each day. You may remember a few weeks ago I talked about my mission to find lots of great ideas for my lunch. Today I’m back with another easy idea: Cucumber “Sandwiches.”
I like to be able to prep for all 5 lunches at the beginning of the week, even if that just means buying the ingredients. Because of this, I look for something that will last for at least 5 meals. A pack of lunch meat, a pack of cheese and one cucumber worked perfectly for this lunch idea!
I usually try to avoid heavier lunches like breads and pastas. Sometimes I’ll use crackers in my lunch, but this time I wanted to try something different. It turns out, cucumbers make a great substitute for bread in these mini sandwiches.
How to Make Your Cucumber Sandwiches
Here’s the recipe for these super easy low carb sandwiches. The amount given below is enough to make one lunch. As I mentioned before, a package of the lunch meat, a package of cheese and a cucumber should last for 5 lunches.
You’ll need:
8 cucumber slices
4 pieces of lunch meat (I used turkey)
1 slice of cheese (I used cheddar)
Cut the cheese into quarters. Layer 2 cucumber slices, 1 cheese quarter and 1 piece of lunch meat to make each sandwich. You might like to add some ranch dressing to dip your sandwiches in. I also liked to sprinkle each sandwich with some salt for a little extra flavor.
I don’t recommend making all 5 lunches at the beginning of the week. The cucumber taste tends to transfer to everything else in the box after a few days. Don’t worry, though, this lunch can still be made in minutes! You can prep at the beginning of the week by slicing the cucumbers and keeping them in a plastic baggie to use as you need.
Add a Side
Pick a healthy side to go with your cucumber “sandwiches.” This week, I bought a bag of sweet potato veggie straws. They added the perfect crunch to this packed lunch. You could also add a hard-boiled egg, more veggies, or fruit.
