How to Make This Greek Sheet Pan Dinner
Step 1: Preheat the oven to 400 F. and line a baking sheet with parchment paper. Place the chicken thighs on the baking sheet.
Step 2: Prep your veggies by peeling and slicing the onion and cutting the cherry tomatoes in half. Spread on the pan. Drizzle everything with olive oil and season with salt, pepper, onion powder, garlic powder, dried basil, dried parsley and dried dill.
Step 3: Bake for 20-25 minutes or until the chicken is cooked throughly. Garnish with the kalamata olives and feta cheese crumbles.
How to Meal Prep This Recipe
This recipe works great for a meal prep lunch! Prepare and cook the recipe as directed and garnish with the kalamata olives and feta cheese. Let cool and then divide into 5 containers.
If desired, you can add a base of cooked rice or quinoa to each of the containers. Otherwise, serve as a low carb meal.

Ingredients
- 2 pounds chicken thighs
- 2 purple onions
- 1 pint cherry tomatoes
- 2 tablespoons olive oil
- Salt, Pepper, Garlic Powder, Onion Powder, Dried Parsley, Dried Basil and Dried Dill (to taste)
- 1/4 cup kalamata olives (pitted)
- 1/4 cup feta cheese crumbles
Instructions
- Preheat oven to 400 F. Line a large baking sheet with parchment paper.
- Place the chicken thighs on the pan, spread evenly around the pan so that they aren't too close together.
- Peel and slice the onions and spread evenly on the pan (they can be overlapping the chicken).
- Slice the cherry tomatoes in half and spread evenly on the pan.
- Drizzle everything on the pan with olive oil and season with Salt, Pepper, Garlic Powder, Onion Powder, Dried Parsley, Dried Basil and Dried Dill to taste (I did about 1 teaspoon of each).
- Bake for 20-25 minutes or until the chicken is cooked throughly. Garnish with kalamata olives and feta cheese and serve.
