Double Chocolate Cream Cheese Cookie Bars
The more chocolate the better, right? Especially when it's Double Chocolate Cookie Bars with a delicious cream cheese layer! This easy dessert starts with a double chocolate chip cookie dough made from scratch. Next comes a cream cheese layer that is made with just 4 ingredients.
Ingredients
- 2/3 cup butter, softened
- 1/2 cup sugar
- 2/3 cup brown sugar
- 1/4 cup cocoa powder
- 2 eggs, beaten
- 1 teaspoon vanilla
- 2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
For the cream cheese filling:
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 egg
Instructions
- Preheat oven to 350 F. Grease a 8x8 inch pan.
- In the bowl of a stand mixer, cream the butter. Mix in the sugar, brown sugar and cocoa powder until combined. Stir in the beaten egg and vanilla.
- In a separate bowl, mix together the flour, baking soda and salt.
- Mix the dry ingredients into the wet ingredients a little at a time.
- Fold in the chocolate chips.
- Press 2/3 of the mixture into the 8x8 pan.
- In another mixing bowl, beat together the cream cheese, sugar, vanilla and egg for the filling.
- Spread the cream cheese filling evenly over the cookie dough layer. Crumble the rest of the cookie dough on top.
- Bake for 40 minutes or until the cream cheese layer is set and the cookie is cooked throughly.
- Cool completely before slicing into bars.
