If you are looking for a healthy snack to prepare for the week, look no further! These Chocolate Date Energy Bites are quickly mixed up in a food processor, shaped into balls and then rolled in shredded coconut.

These Chocolate Coconut Date Energy Balls are packed with ingredients that are nutritious and will give you energy and fill you up.
Dates: When dates are soaked and blended up they turn into a stick, sweet paste. That’s what holds these energy balls together. Dates can be used as a sugar substitute, so they help to sweeten these balls as well. Dates are high in fiber as well as a number of vitamins and minerals so they are great to add to snacks.
Mixed Nuts: I use mixed nuts in this recipe because I always have a container of them in the pantry and because I like how these taste with a variety of nuts. If you prefer, you can use just one type of nut such as cashews, pecans or walnuts.
Cocoa Powder: Add chocolate flavor to these balls with cocoa powder.
Vanilla: The vanilla adds a little flavor and helps to hold the balls together.
Coconut Sugar: Coconut sugar is a natural sweetener that is lower on the glycemic index so it won’t raise your blood sugar as much as refined sugar does.
Shredded Coconut: The finishing touch for these balls is a coating of shredded coconut. If you want these balls to be free from refined sugar, be sure to check the ingredients in your coconut and buy unsweetened shredded coconut as some varieties are sweetened.
What you need to make these energy balls
Besides the ingredients listed above, the main thing you will need to make these energy balls is a food processor. You may be able to make a blender or immersion blender work for these, but for best results I recommend using a food processor to blend the dates and nuts.

- 1 cup dates
- 1 cup boiling water (to soak the dates)
- 1 cup mixed nuts
- 2 tablespoons cocoa powder
- 1 tablespoon coconut sugar
- 1 teaspoon vanilla
- 1/2 cup dry unsweetened shredded coconut
- Place the dates and boiling water in a small bowl and soak for at least 5 minutes.
- Transfer the dates into a food processor (reserve the water for later) and process until smooth. Add the nuts and process until broken down (it can have some small chunks of nuts).
- Scrape the mixture out of the food processor and transfer to a medium bowl. Add the cocoa powder, coconut sugar and vanilla. The mixture should look crumbly, but will come together easily to form balls. If it's too dry, slowly add a tablespoon at a time of the reserved water from soaking the dates.
- Use your hands to form the mixture into 1-inch balls. Roll the balls in the shredded coconut to coat. Place in an airtight container and refrigerate for 30 minutes to firm up. Store in the refrigerator for up to a week.
