Here’s the latest easy, one dish dinner I’ve added to my regular rotation. If you are a fan of broccoli and cheddar soup, you will love this casserole! It combines sausage, rice, broccoli and cheese for a well-rounded meal.
This casserole is made with just a few simple ingredients. First you’ll need to cook some rice. You can even meal prep this early in the week.
Next, chop up the sausage and broccoli. Finally, throw all the ingredients in a casserole dish, mix and bake.

Cheesy Sausage, Broccoli and Rice Casserole

Ingredients
- 1 cup rice, cooked (I usually use jasmine rice or another white rice)
- 1 pound turkey sausage, sliced
- 1 head broccoli, cut up
- 1 cup shredded cheddar cheese
- 1 cup chicken broth
Instructions
- Preheat oven to 350 F. Grease a 9x13 inch pan.
- Combine the rice, sausage, broccoli, 1/2 the cheese and chicken broth in the pan and mix so that everything is combined.
- Top with the remaining cheese and bake for 25-30 minutes or until the broccoli is tender.

Silly question but did you add one cup of cooked rice or one cup of dried riced that you cooked?

I cooked the rice first. If you added more liquid, you could just add try rice and it will cook while the casserole bakes.

how much more liquid should be added for dry rice? the 1 cup plus the amount recommended in cooking instructions for rice? so 3 cups total?

I would add 2 additional cups of liquid (either water or chicken broth) so 3 total cups of liquid. I’ve never made this recipe using dry rice so I can’t guarantee it will turn out the same but I am sure it would work.

Not sure I understand your “dried rice that I cooked,” but there was way too much liquid for 1 cup COOKED rice. I had to add Minute Rice before it went into the oven to soak up some broth while it cooked. Was still some liquid in bottom of dish. I think maybe it should have been uncooked rice in the directions–???

No, this recipe is made with cooked rice. Only 1 additional cup of liquid is added which should continue to cook into the rice so you won’t be left with an overly liquid-y casserole.

No need to pre-cook the sausage, just cut it up and throw it in! If you want them to be a bit crispier, though, you could sauté the sausages in some oil on the stovetop for a few minutes before adding them in.

I don’t cover mine with foil. If the broccoli pieces are larger they will take longer to cook. See the pictures in the post for an example of the size that I cut the broccoli. But you can always leave it in the oven longer until the broccoli is tender!

Yes I have made with frozen broccoli before! You can add in frozen or thaw first, whatever your preference is.

I had to cook the rice, thaw and cook my sausages, and lightly cook frozen broccoli and lightly cook onions with bell peppers. I wanted to be sure everything cooked together evenly. This is a delicious recipe. I will probably make it again soon. It’s great that you can use different dinner sausages, different vegetables, different shredded cheese so you aren’t always making the exact same meal.

I am guessing that the cheese is shredded, but that should be included in the ingredients since some of us buy a brick of cheese rather than a bag of shredded.
