Can you believe it’s already the second week of September? The summer flew by for me. The past couple months have been pretty crazy for me with buying a house and planning my wedding, so I’ve been relying on easy dinner recipes.
This Cheesy Ro*tel Chicken Bake is one of the easiest dinner recipes I’ve created lately! This casserole-style dish is so easy to throw together. Just add a few ingredients and stick it in the oven.
I used Ro*tel, Progresso Chicken Broth and Kraft Shredded Mexican Cheese to create this meal that is packed with flavor.
This Mexican-style casserole is an all-in-one meal that will please the whole family. It’s great for busy nights since it only takes a few minutes to throw together.
Ro*tel is an ingredient I try to keep in the house for easy meals. It adds so much flavor to any dish! It’s great for soups or casseroles like this.

Cheesy Ro*tel Chicken Bake
Easy Cheesy Ro*tel Chicken Bake is a one dish meal that you can make on a busy night.
Ingredients
- 1 1/2 cups dry rice
- 1 cup Progresso Chicken Broth
- 1 10 oz can Ro*tel Diced Tomatoes and Green Chilis
- 1 cup Kraft Mexican cheese
- 4 boneless, skinless chicken breasts (uncooked), cut into cubes
Instructions
- Cook the rice according to the directions on the package.
- Preheat the oven to 350 F.
- In a large casserole dish, mix the cooked rice, chicken broth, Ro*tel, chicken and 3/4 of the cheese. Spread evenly in the dish.
- Sprinkle with the remaining cheese.
- Bake for 30 minutes or until the chicken is cooked thoroughly.

Is the rice supposed to be baked into the dish, or it’s a side?

It’s baked into the dish. As you can see in the recipe, it’s one of the ingredients you mix into the casserole dish before baking.

Do you drain the rotel first before mixing in. Can you use instant rice? Cooked or raw? thanks

Don’t drain the Rotel. You can use instant rice, uncooked before mixing it into the casserole.

This kind of falls in line with Campbell’s Cheesy Chicken and rice. This recipe you don’t need to cube the chicken and use whole raw boneless chicken breast and no need to precook rice. I wonder if you can do the same with this recipe?

You could definitely use whole chicken breasts instead of cubing them, it would just be a longer cooking time. I’ve never tried this recipe without cooking the rice first, so I can’t say if that would work or not.

Delicious and easy! Most of the ingredients are things I like to keep on hand because they can be used so many ways. It’s a very versatile dish, easy to tweak depending on your personal tastes or what you have in the kitchen.
I did substitute fresh grated sharp cheddar cheese, as the block of cheese was all I had in the fridge. Also, I only had 1 cup of dry rice so I used that, but did not reduce the liquid at all and it turned out just fine. And I added some taco seasoning for extra flavor. If I had black beans I would have tossed some of those in there and maybe corn too. Personally I don’t like bell peppers or onions at all, but it would be easy to mix those in if you did like them.
Thinking it might make a really good filling for Verde enchiladas, especially if you were to add cream cheese to the mix- Maybe something to experiment with for next time!
But I loved the casserole as is, and will definitely be saving this recipe to make it again!

This recipe is OK, as written, but needs some work. The chicken should be seasoned with seasoning salt and black pepper and tossed, before mixing in. You should also add twice the cheese recommended. If you like it spicy, add another can of RoTel tomatoes.
