I love bacon, whether by itself or as a part of a dish. I especially like to use bacon for meals besides breakfast, such as in pastas, on burgers, or for this dish, wrapped around scallops! This is a great side dish to go with any seafood meal, such as my Tilapia with Quinoa and Feta.
You will need:
5 slices of bacon
1/4 pound of large scallops
1/4 cup olive oil
Cut the strips of bacon in half. Take a scallop and wrap the bacon around it. Using two toothpicks, secure the bacon around the scallops. Heat the oil in a skillet at medium high. Drop the scallops into the skillet. Using tongs, flip them often to be sure all sides get cooked. Cook for 5-7 minutes or until the scallop is solid white and the bacon is cooked.
