I love making salads for lunch (especially in mason jars!), but so many salad dressings out there are so bad for you! They are filled with fat and calories and ingredients you can’t pronounce. Because of this, I’ve decided to experiment with making my own dressings at home.
I’ve been on an avocado kick for awhile now. One of my favorite salad dressings is Avocado Ranch, so that was the perfect candidate for my first homemade salad dressing. This dressing is light, creamy, and delicious!
I made a spinach salad with grilled chicken, tomatoes and cucumbers and served it with this Avocado Ranch Dressing. It was delicious! This dressing would also be great for a southwest salad.
- 1/2 avocado
- 1 cup greek yogurt
- Juice from 1/2 of a lime
- 2 chives, chopped
- 1/4 cup fresh cilantro
- Salt to taste
- Pepper to taste
- Combine the avocado, greek yogurt, lime juice, chives and cilantro in a food processor and mix well.
- Pour the dressing into a bowl and season with salt and pepper to taste.
- Serve with your favorite salad.
